We are excited to offer an unblended 100% Asahi Cultivar matcha from Uji, Japan. Asahi cultivar is revered in Uji for its natural sweetness, aroma, and deep green color. This is a wonderful opportunity to try a style of tea not commonly found outside of Japan's domestic market, or inside it for that matter.

Brewing

Traditional Thin preparation (Usucha)

2g matcha / 65ml water 85°C (180°F)

Whisk vigorously for 15 - 20 seconds

Usucha should have a fine, shiny crema like foam

Thick Preparation (Koicha)

4g matcha / 30-35ml water 85°C (180°F)

Add water to the tea a bit at a time

knead the matcha until it is uniformly mixed

The texture of koicha should be like paint or buttermilk

We are excited to offer an unblended 100% Asahi Cultivar matcha from Uji, Japan. Single cultivar matcha is less common to find as blended matcha provides consistent, brand specific profiles which can be crafted year in and year out to with little variance. Blends generally represent medium to larger producers (We love blends too!) whereas single cultivar matcha is most commonly grown by smaller producers and is clearer bearer of terroir, seasonality, and the cultivars distinct profile.

Most often these smaller farmers will sell their tencha to other manufactures who use it for blends - we are lucky to be working with a revered producer, Furukawa San, who has made it a point to celebrate and share these unblended matchas. This is true "small batch" tea.
