Cold Tea (mizudashi - 水出し)

Cold gyokuro is perfect when the summer hits. Luckily, it is incredibly easy to make. Take 10 grams of gyokuro, add 12-16oz of cold water then store in the fridge for about an hour. After, stir the leaves, strain them from the water and enjoy! Cold brewing brings out the inherent sweetness of the leaf while limiting the caffeine level (Caffeine is drawn out by hot water).
