Below you will find detailed instructions for properly brewing all of our teas. Each tea has unique parameters for brewing which should be followed as closely as possible. Once you are comfortable brewing the given instructions, please feel free to play with the parameters to discover all the flavors, aromas, and nuances of each tea.


sencha 煎茶

  1.  Boil fresh, filtered water and pour into cup - this preheats the cup and cools the water-  45 s

  2. Pour water from the cup into an empty teapot - this preheats the pot and further cools the water - 30s

  3. Pour water from teapot back into empty cup

  4. Add sencha leaves to preheated tea pot - 1g of tea per 1oz of water

  5. Slowly pour cooled water from cup over the tea leaves - water should be about 170°-176°

  6. Allow tea to steep for 45s-1min then slowly pour tea into cup making sure to shake out the last drop

kabuse 冠茶

  1. Boil fresh, filtered water and pour into cup - this preheats the cup and cools the water-  1m30s

  2. Pour water from the cup into an empty teapot - this preheats the pot and further cools the water - 45s
  3. Pour water from teapot back into empty cup
  4. Add Kabuse leaves to preheated tea pot - 1.5g of tea per 1oz of water
  5. Slowly pour cooled water from cup over the tea leaves - water should be about 165°-170°F
  6. Allow tea to steep for 1m30s then slowly pour tea into cup making sure to shake out the last drops

gyokuro 玉露

  1.  Boil fresh, filtered water and pour into cup - this preheats the cup and cools the water-  2mins
  2. Pour water from the cup into an empty teapot - this preheats the pot and further cools the water - 1min
  3. Pour water from teapot back into empty cup
  4. Add Gyokuro leaves to preheated tea pot - 2g of tea per 1oz of water
  5. Slowly pour cooled water from cup over the tea leaves - water should be about 135°-145°F
  6. Allow tea to steep for 2mins then slowly pour tea into cup making sure to shake out the last drop
  7. Enjoy in Silence

houjicha ほうじ茶

  1. Boil fresh, filtered water and pour into cup - this preheats the cup and cools the water-  45 s
  2. Pour water from the cup into an empty teapot - this preheats the pot and further cools the water - 30s
  3. Pour water from teapot back into empty cup
  4. Add Houjicha leaves to preheated tea pot - 1g of tea per 1oz of water
  5. Slowly pour cooled water from cup over the tea leaves - water should be about 176°-188°F
  6. Allow tea to steep for 45s-1 min then slowly pour tea into cup 

matcha 抹茶 

usucha - thin style

  1. pour boiling water into your tea bowl and allow to sit for 2 mins - pour off water and towel dry bowl
  2. add 2 grams of sifted matcha to your pre warmed bowl
  3. slowly pour 3 oz of water over the matcha - water should be about 180°F
  4. Whisk the tea vigorously in a "Z" motion until a fine, even foam arises on the top of the tea
  5. drink directly from the bowl
  6. Enjoy in silence

koicha - thick style*

  1. pour boiling water into your tea bowl and allow to sit for 2 mins - pour off water and towel dry bowl
  2. add 4 grams of sifted matcha to your pre warmed bowl
  3. slowly pour 2 oz of water over the matcha - water should be about 180°F
  4. slowly knead the water and tea together in a "Z" motion until tea is the consistency of buttermilk
  5. drink directly from the bowl
  6. enjoy in silence
